- Salt and pepper to taste
Directions
- Heat the oil and butter in a large skillet over medium-high heat.
- Add the sweet potatoes and cook, stirring occasionally, for 5 minutes.
- Add the bell peppers, onion, and garlic and cook for an additional 5 minutes.
- Stir in the cumin, chili powder, paprika, salt, and pepper and cook for 3 minutes.
- Reduce the heat to low and cook, stirring occasionally, for an additional 10 minutes.
