Ingredients

  • 8 oz noodles (such as ramen or udon)
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tbsp sriracha sauce
  • 2 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 cup vegetables (such as bell peppers, carrots, and broccoli), sliced
  • 1/2 cup protein (such as tofu or shrimp), cooked and sliced
  • 2 green onions, sliced
  • 1 tbsp sesame seeds

Directions

  1. Cook noodles according to package instructions. Drain and set aside.
  2. In a large skillet or wok, heat vegetable oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  3. In a small bowl, whisk together soy sauce, sriracha sauce, rice vinegar, and brown sugar.
  4. Add the sauce to the skillet and stir well to combine with the garlic. Cook for 2-3 minutes, until the sauce thickens slightly.
  5. Add the sliced vegetables and cook for 3-4 minutes, until they are tender-crisp.
  6. Add the cooked noodles and protein to the skillet. Toss everything together until the noodles are evenly coated with the sauce.

  8. Remove from heat and garnish with sliced green onions and sesame seeds.
