These spicy shrimp nachos are the perfect appetizer or snack for any occasion. Loaded with juicy shrimp, melted cheese, and a spicy kick, they are sure to impress your guests. Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1 bag tortilla chips
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup sliced jalapenos
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sour cream
  • 1/4 cup guacamole

Directions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the shrimp, olive oil, paprika, cumin, chili powder, garlic powder, cayenne pepper, salt, and pepper. Toss to coat the shrimp evenly.
  3. Heat a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until cooked through and slightly charred. Remove from heat.
  4. Spread a layer of tortilla chips on a baking sheet. Sprinkle half of the shredded cheddar and Monterey Jack cheese over the chips.
  5. Arrange the cooked shrimp over the cheese. Sprinkle the diced tomatoes, red onion, jalapenos, and cilantro over the shrimp.
  6. Top with the remaining shredded cheese.
  7. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let cool for a few minutes.
  9. Serve the shrimp nachos warm with sour cream and guacamole on the side. Enjoy!
