Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 1 bag tortilla chips
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup sliced jalapenos
- 1/4 cup chopped fresh cilantro
- 1/4 cup sour cream
- 1/4 cup guacamole
Directions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the shrimp, olive oil, paprika, cumin, chili powder, garlic powder, cayenne pepper, salt, and pepper. Toss to coat the shrimp evenly.
- Heat a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until cooked through and slightly charred. Remove from heat.
- Spread a layer of tortilla chips on a baking sheet. Sprinkle half of the shredded cheddar and Monterey Jack cheese over the chips.
- Arrange the cooked shrimp over the cheese. Sprinkle the diced tomatoes, red onion, jalapenos, and cilantro over the shrimp.
- Top with the remaining shredded cheese.
- Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
