Ingredients

  • 2 large jalapeno peppers
  • 1 cup cream cheese, softened
  • 1/4 cup mayonnaise

  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt

  • 4 flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup diced tomatoes
  • 1/4 cup diced red onion

Directions

  1. Preheat the broiler. Place the jalapeno peppers on a baking sheet and broil for 5-7 minutes, until charred and blistered. Remove from the oven and let them cool.
  2. Once cooled, remove the stems, seeds, and membranes from the jalapeno peppers. Finely chop them and set aside.
  3. In a mixing bowl, combine the cream cheese, mayonnaise, sour cream, lime juice, garlic powder, onion powder, cumin, paprika, salt, and black pepper. Mix well until all the ingredients are fully combined.
  4. Add the chopped jalapenos to the cream cheese mixture and stir until evenly distributed.
  5. Spread the jalapeno mixture evenly onto one side of each tortilla.
  6. Sprinkle shredded Monterey Jack cheese, diced tomatoes, diced red onion, and chopped cilantro on top of the jalapeno mixture.
  7. Fold each tortilla in half, pressing gently to seal the filling inside.
  8. Heat a large skillet over medium heat. Place one folded tortilla in the skillet and cook for 2-3 minutes on each side, until golden brown and crispy. Repeat with the remaining tortillas.
