Ingredients

  • 4 medium potatoes, peeled and diced

  • 1 teaspoon of paprika
  • 1/2 teaspoon of cayenne pepper

Directions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrots, and celery. Saute until the vegetables are tender, about 5 minutes.
  2. Add the diced potatoes, paprika, cayenne pepper, dried thyme, salt, and black pepper. Stir well to coat the potatoes and vegetables with the spices.
  3. Pour in the chicken or vegetable broth and bring to a boil. Reduce the heat to low and simmer for 20 minutes, or until the potatoes are fork-tender.
  4. Using an immersion blender or a regular blender, blend the soup until smooth and creamy. If using a regular blender, blend in batches and be careful not to overfill the blender with hot liquid.
  5. Return the soup to the pot and stir in the milk. Cook for an additional 5 minutes, or until heated through.
