Ingredients

  • For the crepes:
  • 1 cup all-purpose flour
  • 1 cup milk
  • 2 large eggs
  • 2 tablespoons melted butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon chili powder
  • For the bean filling:
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • For the salsa:
  • 2 tomatoes, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeno pepper, seeded and minced
  • 1/4 cup chopped cilantro
  • Juice of 1 lime
  • Salt to taste

Directions

  1. In a mixing bowl, whisk together flour, milk, eggs, melted butter, salt, and chili powder until smooth. Let the batter rest for 10 minutes.
  2. Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter onto the skillet and swirl it around to evenly coat the bottom. Cook for 2 minutes or until the edges start to lift. Flip the crepe and cook for another 1-2 minutes until lightly golden. Repeat with the remaining batter to make 8 crepes.
  3. Meanwhile, in a separate pan, heat olive oil over medium heat. Add diced onion and minced garlic. Cook until onions are translucent and garlic is fragrant, about 5 minutes.
  4. Add black beans, cumin powder, paprika, salt, and pepper to the pan. Mash the beans slightly using the back of a spoon. Cook for 5 minutes, stirring occasionally, until heated through.
  5. In a bowl, combine diced tomatoes, red onion, minced jalapeno pepper, chopped cilantro, lime juice, and salt to make the salsa.
  6. To assemble, spoon a generous amount of bean filling onto the center of each crepe. Roll it up and place it seam-side down on a serving plate. Repeat with the remaining crepes and filling.
  7. Top the crepes with the salsa and serve hot. Optionally, garnish with additional cilantro and a dollop of sour cream or guacamole.
