Ingredients
- For the crepes:
- 1 cup all-purpose flour
- 1 cup milk
- 2 large eggs
- 2 tablespoons melted butter
- 1/4 teaspoon salt
- 1/4 teaspoon chili powder
- For the bean filling:
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 can (15 ounces) black beans, drained and rinsed
- 1/2 teaspoon cumin powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- For the salsa:
- 2 tomatoes, diced
- 1/2 red onion, finely chopped
- 1 jalapeno pepper, seeded and minced
- 1/4 cup chopped cilantro
- Juice of 1 lime
- Salt to taste
Directions
- In a mixing bowl, whisk together flour, milk, eggs, melted butter, salt, and chili powder until smooth. Let the batter rest for 10 minutes.
- Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter onto the skillet and swirl it around to evenly coat the bottom. Cook for 2 minutes or until the edges start to lift. Flip the crepe and cook for another 1-2 minutes until lightly golden. Repeat with the remaining batter to make 8 crepes.
- Meanwhile, in a separate pan, heat olive oil over medium heat. Add diced onion and minced garlic. Cook until onions are translucent and garlic is fragrant, about 5 minutes.
- Add black beans, cumin powder, paprika, salt, and pepper to the pan. Mash the beans slightly using the back of a spoon. Cook for 5 minutes, stirring occasionally, until heated through.
- In a bowl, combine diced tomatoes, red onion, minced jalapeno pepper, chopped cilantro, lime juice, and salt to make the salsa.
- To assemble, spoon a generous amount of bean filling onto the center of each crepe. Roll it up and place it seam-side down on a serving plate. Repeat with the remaining crepes and filling.
