Ingredients

  • 1 tablespoon vegetable oil
  • 1 teaspoon cumin seeds
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • 1 cup red lentils, rinsed and drained
  • 3 cups vegetable broth
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1/2 cup heavy cream
  • Salt and freshly ground black pepper, to taste

Directions

  1. Heat the oil in a large saucepan over medium heat. Add the cumin seeds and cook for 1 minute.
  2. Add the onion and cook until softened, about 5 minutes.
  3. Add the garlic, ginger, garam masala, turmeric, and cayenne pepper and cook for 1 minute.
  4. Add the lentils and vegetable broth and bring to a boil. Reduce the heat to a simmer and cook for 15 minutes, or until the lentils are tender.
  5. Add the diced tomatoes and simmer for 5 minutes.
  6. Stir in the cream and season with salt and pepper to taste.
  7. Serve hot.
