Ingredients

  • 2 lbs boneless chicken, cut into pieces

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • Salt, to taste
  • Fresh cilantro, for garnish

Directions

  1. In a large pot, heat the vegetable oil over medium heat. Add the diced onions and cook until they are translucent.
  2. Add the minced garlic and grated ginger to the pot and cook for another minute.
  3. Add the chicken pieces to the pot and cook until they are browned on all sides.
  4. In a small bowl, combine the African curry powder, ground cumin, ground coriander, paprika, turmeric, and cayenne pepper. Stir to mix well.
  5. Sprinkle the spice mixture over the chicken in the pot and stir to coat the chicken evenly.
  6. Add the diced tomatoes with their juices and the coconut milk to the pot. Stir to combine all the ingredients.
  7. Cover the pot and simmer the curry over low heat for 45 minutes, or until the chicken is cooked through and tender.
  8. Season the curry with salt, to taste.
  9. Serve the African curry over steamed rice or with warm naan bread.
