Ingredients
- 2 lbs boneless chicken, cut into pieces
- 2 tablespoons vegetable oil
- 1 large onion, diced
- 3 cloves of garlic, minced
- 1 tablespoon grated ginger
- 2 tablespoons African curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper (adjust to taste)
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) coconut milk
- Salt, to taste
- Fresh cilantro, for garnish
Directions
- In a large pot, heat the vegetable oil over medium heat. Add the diced onions and cook until they are translucent.
- Add the minced garlic and grated ginger to the pot and cook for another minute.
- Add the chicken pieces to the pot and cook until they are browned on all sides.
- In a small bowl, combine the African curry powder, ground cumin, ground coriander, paprika, turmeric, and cayenne pepper. Stir to mix well.
- Sprinkle the spice mixture over the chicken in the pot and stir to coat the chicken evenly.
- Add the diced tomatoes with their juices and the coconut milk to the pot. Stir to combine all the ingredients.
- Cover the pot and simmer the curry over low heat for 45 minutes, or until the chicken is cooked through and tender.
- Season the curry with salt, to taste.
