- 1/4 teaspoon cayenne pepper

- 1 jalapeno pepper, seeded and minced
- 1 can diced tomatoes (14.5 oz)
- 4 cups chicken broth
- 1 carrot, diced
- 1 potato, diced
- 1 zucchini, diced
- 1/4 cup chopped fresh cilantro
- 1 tablespoon lime juice
- Salt and pepper to taste
Directions
- In a large bowl, combine ground beef, cooked rice, chopped onion, minced garlic, cilantro, egg, ground cumin, dried oregano, cayenne pepper, salt, and black pepper. Mix well to combine.
- Shape the mixture into small meatballs, about 1 inch in diameter.
- Heat vegetable oil in a large pot over medium heat. Add the chopped onion, minced garlic, and jalapeno pepper. Sauté until the onion turns translucent and the garlic becomes fragrant.
- Add the diced tomatoes and chicken broth to the pot. Bring the mixture to a boil.
- Gently add the meatballs to the boiling broth. Reduce the heat to low and simmer for about 20 minutes, or until the meatballs are cooked through.
