Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 4 pita breads
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup mayonnaise
  • 2 tablespoons adobo sauce (from a can of chipotle peppers in adobo)
  • 1 tablespoon lime juice

Directions

  1. Preheat grill to medium-high heat.
  2. In a small bowl, combine olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper. Stir to create a marinade.
  3. Place chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken breasts.
  4. Place the bag in the refrigerator and let the chicken marinate for at least 20 minutes.
  5. Grill the chicken breasts for 6-8 minutes per side, or until cooked through. Remove from the grill and let them rest for a few minutes before slicing.
  6. While the chicken is resting, prepare the chipotle sauce. In a small bowl, whisk together mayonnaise, adobo sauce, and lime juice.
  7. To assemble the pitas, warm them up on the grill for a minute on each side.
  8. Slice the grilled chicken into thin strips.
  9. Open each pita bread and fill it with shredded lettuce, diced tomatoes, diced red onion, chopped cilantro, and the sliced grilled chicken.
  10. Drizzle each pita with the chipotle sauce.
  11. Serve immediately and enjoy!
