Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cooked rice
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup chicken broth
  • 2 tablespoons olive oil

Directions

  1. Preheat oven to 375°F.
  2. In a skillet, heat olive oil over medium heat. Add bell peppers, onions, and garlic. Cook until softened.
  3. Stir in cooked rice, Cajun seasoning, paprika, salt, and pepper. Cook for another 2-3 minutes.
  4. Butterfly each chicken breast and pound to flatten. Season with salt and pepper.
  5. Place a spoonful of the rice mixture onto each chicken breast and roll up. Secure with toothpicks.
  6. Place stuffed chicken breasts in a baking dish and pour chicken broth over them.
  7. Bake for 25-30 minutes or until chicken is cooked through.
