Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup long grain brown rice
- 2 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes, drained
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 2 tablespoons chopped fresh parsley
Directions
- Heat the oil in a large saucepan over medium heat.
- Add the onion and garlic and sauté until the onion is softened, about 5 minutes.
- Add the rice and sauté for 1 minute, stirring frequently.
- Add the broth, tomatoes, oregano, paprika, salt, pepper, and red pepper flakes. Bring to a boil.
- Reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.
- Stir in the parsley, and serve.
