Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup long grain brown rice
  • 2 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons chopped fresh parsley

Directions

  1. Heat the oil in a large saucepan over medium heat.
  2. Add the onion and garlic and sauté until the onion is softened, about 5 minutes.
  3. Add the rice and sauté for 1 minute, stirring frequently.
  4. Add the broth, tomatoes, oregano, paprika, salt, pepper, and red pepper flakes. Bring to a boil.
  5. Reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.
  6. Stir in the parsley, and serve.
