Ingredients
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
1 cup long grain brown rice
2 cups chicken broth

Directions
Heat the oil in a large saucepan over medium heat.
Add the onion and garlic and sauté until the onion is softened, about 5 minutes.
Add the rice and sauté for 1 minute, stirring frequently.
Add the broth, tomatoes, oregano, paprika, salt, pepper, and red pepper flakes. Bring to a boil.
Reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.
Stir in the parsley, and serve.
