Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup butter, melted
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 large eggs, lightly beaten

Directions

  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin pan with butter or line with paper liners.
  2. In a large bowl, whisk together flour, baking powder, baking soda and salt.
  3. In a separate bowl, combine sugar, melted butter, sour cream, vanilla extract and eggs. Whisk until everything is combined.
  4. Add wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Divide the batter between the muffin cups. Bake for 20-25 minutes, until a toothpick inserted into the center comes out clean.
  6. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack and let cool completely.
