Ingredients

  • 1 package soba noodles
  • 3 tablespoons toasted sesame seeds
  • 1/4 cup soy sauce
  • 2 tablespoons mirin
  • 1/4 cup vegetable broth
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 tablespoons sugar
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • Salt and pepper to taste

Directions

  1. Bring a pot of salted water to a boil. Add the soba noodles and cook according to the package instructions.
  2. Meanwhile, toast the sesame seeds in a dry skillet over medium-high heat until golden brown and fragrant.
  3. In a small bowl, whisk together the soy sauce, mirin, vegetable broth, sesame oil, garlic, ginger, and sugar.
  4. In a separate small bowl, whisk together the cornstarch and water until combined.
  5. Add the cornstarch mixture to the soy sauce mixture and whisk to combine.
  6. Heat a skillet over medium-high heat and add the soy sauce mixture. Bring to a simmer and cook until thickened, about 5 minutes.
  7. Add the toasted sesame seeds and stir to combine. Season with salt and pepper to taste.
  8. Drain the soba noodles and add to the skillet with the sauce. Toss to combine and cook for 1 minute.
  9. Serve the soba noodles topped with the sesame seed sauce.
