Ingredients
- 1 package soba noodles
- 3 tablespoons toasted sesame seeds
- 1/4 cup soy sauce
- 2 tablespoons mirin
- 1/4 cup vegetable broth
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 2 tablespoons sugar
- 1 tablespoon cornstarch
- 1/4 cup water
- Salt and pepper to taste
Directions
- Bring a pot of salted water to a boil. Add the soba noodles and cook according to the package instructions.
- Meanwhile, toast the sesame seeds in a dry skillet over medium-high heat until golden brown and fragrant.
- In a small bowl, whisk together the soy sauce, mirin, vegetable broth, sesame oil, garlic, ginger, and sugar.
- In a separate small bowl, whisk together the cornstarch and water until combined.
- Add the cornstarch mixture to the soy sauce mixture and whisk to combine.
- Heat a skillet over medium-high heat and add the soy sauce mixture. Bring to a simmer and cook until thickened, about 5 minutes.
- Add the toasted sesame seeds and stir to combine. Season with salt and pepper to taste.
- Drain the soba noodles and add to the skillet with the sauce. Toss to combine and cook for 1 minute.
- Serve the soba noodles topped with the sesame seed sauce.
