Ingredients

  • 1 pie crust (homemade or store-bought)
  • 1/2 cup light molasses
  • 1/2 cup packed dark brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/2 cup boiling water
  • 2 tablespoons butter, chilled and cut into small pieces

Directions

  1. Preheat oven to 375°F. Line a 9-inch pie plate with the pie crust and crimp the edges.
  2. In a medium bowl, whisk together the molasses, brown sugar, cinnamon, ginger, nutmeg, and salt. Add the flour and whisk until combined.
  3. Pour the boiling water over the mixture and whisk until smooth. Pour the filling into the prepared crust.
  4. Sprinkle the chilled butter pieces over the filling. Bake for 25-30 minutes, or until the top is golden brown and the filling is bubbly.
  5. Allow to cool before serving.
