Ingredients

  • 8 ounces of spaghetti
  • 1 pound of scallops, cleaned
  • 2 small zucchini, sliced
  • 2 cups of cherry tomatoes, halved
  • 4 cloves of garlic, minced
  • 1/4 cup of fresh basil, chopped
  • 1/4 cup of fresh parsley, chopped
  • 1/2 cup of grated Parmesan cheese
  • 3 tablespoons of olive oil
  • Salt and pepper to taste

Directions

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  3. Pat the scallops dry with a paper towel and season them with salt and pepper.
  4. Sear the scallops in the hot skillet for 2 minutes on each side until golden brown. Remove from the skillet and set aside.
  5. In the same skillet, add the remaining tablespoon of olive oil and sauté the minced garlic until fragrant.
