Ingredients

  • 12 chicken wings
  • 2 tablespoons soy sauce

Directions

  1. Start by preparing the chicken. Cut off the wingtips and discard them. Separate the drummettes from the wingettes by cutting between the joint.
  2. In a bowl, combine the soy sauce, Worcestershire sauce, lime juice, honey, minced garlic, grated ginger, paprika, and cayenne pepper. Mix well.
  3. Place the chicken wings in a ziplock bag and pour the marinade over them. Seal the bag and massage the marinade into the wings. Place the bag in the refrigerator and let the chicken marinate for at least 30 minutes, or up to overnight for maximum flavor.
  4. In a shallow dish, combine the flour, breadcrumbs, salt, and black pepper. Mix well.
  5. Preheat the oil in a deep fryer or large pot to 375°F (190°C).
  6. Take the marinated chicken wings out of the bag and drain off any excess marinade. Discard the marinade.
  7. Thread a wooden skewer into the meaty part of each wing, pushing it closer to the bone to create the lollipop shape.
  8. Roll each chicken lollipop in the breadcrumb mixture, ensuring they are well coated.
  9. Carefully place the coated chicken lollipops into the hot oil, a few at a time, and fry until golden brown and cooked through, about 8-10 minutes.
  10. Remove the chicken lollipops from the oil and drain on a paper towel-lined plate.
