Ingredients

  • 1/2 head of lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup diced red onion
  • 1/4 cup sliced black olives
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon honey
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine lettuce, tomatoes, cucumber, feta cheese, red onion, and olives.
  2. In a small bowl, whisk together olive oil, red wine vinegar, honey, dijon mustard, garlic powder, cumin, salt, and pepper.
  3. Pour dressing over salad and toss to combine.
  4. Garnish with fresh parsley and serve.
