Sarah's Quick Warm Lentil Salad

Ingredients

  • 1 cup dry lentils
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 garlic clove, minced
  • 1 large carrot, diced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons white wine vinegar
  • 1/4 cup fresh parsley, chopped

Directions

  1. In a medium pot, combine the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes or until the lentils are tender.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook for 3 minutes, stirring often.
  3. Add the carrot and cook for another 3 minutes, stirring often.
  4. Stir in the oregano, basil, salt, and pepper. Cook for 1 minute, stirring often.
  5. Add the cooked lentils to the skillet and stir to combine. Cook for 2 minutes, stirring often.
  6. Remove from heat and stir in the white wine vinegar and parsley.
  7. Serve warm or chilled.
