Ingredients
1 cup dry lentils
2 cups vegetable broth
1 tablespoon olive oil
1 small onion, diced
1 garlic clove, minced
1 large carrot, diced
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon sea salt
1/4 teaspoon black pepper
2 tablespoons white wine vinegar
1/4 cup fresh parsley, chopped
Directions
In a medium pot, combine the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes or until the lentils are tender.
In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook for 3 minutes, stirring often.
Add the carrot and cook for another 3 minutes, stirring often.
Stir in the oregano, basil, salt, and pepper. Cook for 1 minute, stirring often.
Add the cooked lentils to the skillet and stir to combine. Cook for 2 minutes, stirring often.
Remove from heat and stir in the white wine vinegar and parsley.
Serve warm or chilled.
