Ingredients

  • 3 medium golden beets
  • 1 can (15 ounces) chickpeas, drained and rinsed

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and trim the golden beets, leaving the skin on. Wrap each beet in aluminum foil.
  3. Place the wrapped beets on a baking sheet and roast in the preheated oven for 45-60 minutes, or until the beets are tender when pierced with a fork.
  4. Remove the beets from the oven and let them cool until they can be handled.
  5. Once cooled, peel the skin off the beets using your hands or a knife. The skin should easily come off. Dice the peeled beets into small cubes.
  6. In a food processor, combine the roasted golden beets, chickpeas, minced garlic, tahini, lemon juice, olive oil, cumin, coriander, salt, and black pepper. Process until smooth and creamy.
  7. If the hummus is too thick, add water, 1 tablespoon at a time, until desired consistency is reached. Continue to process until well combined.
  8. Taste and adjust the seasonings according to your preference.
  9. Transfer the hummus to a serving dish and drizzle with olive oil. Top with chopped fresh herbs and sesame seeds, if desired.
