Ingredients
- 3 medium golden beets
- 1 can (15 ounces) chickpeas, drained and rinsed
- 2 cloves garlic, minced
- 3 tablespoons tahini
- Juice of 1 lemon
- 1/4 cup extra-virgin olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Water, as needed

Directions
- Preheat the oven to 400°F (200°C).
- Wash and trim the golden beets, leaving the skin on. Wrap each beet in aluminum foil.
- Place the wrapped beets on a baking sheet and roast in the preheated oven for 45-60 minutes, or until the beets are tender when pierced with a fork.
- Remove the beets from the oven and let them cool until they can be handled.
- Once cooled, peel the skin off the beets using your hands or a knife. The skin should easily come off. Dice the peeled beets into small cubes.
