Ingredients
- 1 and 3/4 cups all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup Irish whiskey
- 1/2 cup strong brewed coffee
- 1/2 cup buttermilk
- For the whiskey glaze:
- 1/4 cup unsalted butter
- 1/2 cup granulated sugar
- 1/4 cup water
- 1/4 cup Irish whiskey
Directions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate small bowl, combine the Irish whiskey, strong brewed coffee, and buttermilk.
- Alternately add the dry ingredients and the whiskey-coffee mixture to the butter-sugar mixture, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- While the cake is baking, prepare the whiskey glaze. In a small saucepan, melt the butter over medium heat. Stir in the sugar, water, and Irish whiskey. Bring to a boil and simmer for 5 minutes, stirring constantly, until the sugar has dissolved and the glaze has thickened slightly.
- Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, invert the cake onto a wire rack to cool completely.
- Once the cake is completely cool, drizzle the whiskey glaze over the top. Allow the glaze to set before serving. Enjoy!
