Ingredients

  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon finely chopped fresh mint leaves
  • Red and green food coloring (optional)
  • Black sesame seeds (for decoration)

Directions

  1. In a large mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
  2. Add the fresh watermelon juice and vanilla extract to the bowl and mix until well combined.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until the dough comes together.
  5. Fold in the finely chopped fresh mint leaves. If desired, divide the dough into two equal portions and color one portion with red food coloring and the other with green food coloring. This will create a watermelon-like appearance.
  6. Cover the dough with plastic wrap and refrigerate for at least 1 hour to allow it to firm up.
  7. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  8. Take about a tablespoon of cookie dough and roll it into a ball. Gently flatten the ball between your palms to create a cookie shape.
  9. Place the cookies on the prepared baking sheet, spacing them about 2 inches apart.
  10. Using the tip of a knife, create small indentations on the top of each cookie to resemble watermelon seeds. Insert black sesame seeds into the indentations.
