This Americanized version of Japanese cucumber sunomono is a perfect side dish for any meal. The crisp and refreshing cucumbers combined with the sweet and tangy dressing will keep you coming back for more.

Ingredients

  • 2 Japanese cucumbers, thinly sliced
  • 1/4 cup rice vinegar
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 1/4 cup water
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/4 cup chopped scallions
  • 1/4 cup toasted sesame seeds

Directions
