Ingredients

  • 1 cup long-grain white rice
  • 1 cup blanched almonds
  • 1 cinnamon stick

  • 6 cups water, divided

Directions

  1. In a blender, combine the rice, almonds, cinnamon stick, vanilla extract, and 2 cups of water. Blend until the mixture is smooth and well combined.
  2. Strain the mixture through a fine-mesh sieve into a large bowl, pressing down on the solids to extract as much liquid as possible.
  3. Discard the solids and return the liquid to the blender. Add the sugar and remaining 4 cups of water. Blend until the sugar is dissolved.
  4. Refrigerate the horchata for at least 2 hours, or until chilled.
