Ingredients
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon smoked paprika

3 cups cooked red beans (or two 15-ounce cans, drained and rinsed)

Directions
Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the thyme, oregano, paprika, cumin, and cayenne pepper. Cook, stirring, for 1 minute.
Add the red beans and rice and stir to combine. Pour in the vegetable broth and bring to a boil.
Reduce the heat to low and cover. Simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.
Season with salt and pepper to taste. Serve hot.
