Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 3 cups cooked red beans (or two 15-ounce cans, drained and rinsed)
- 1 cup long-grain white rice
- 2 1/2 cups vegetable broth
- Salt and pepper to taste
Directions
- Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the thyme, oregano, paprika, cumin, and cayenne pepper. Cook, stirring, for 1 minute.
- Add the red beans and rice and stir to combine. Pour in the vegetable broth and bring to a boil.
- Reduce the heat to low and cover. Simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.
- Season with salt and pepper to taste. Serve hot.
