This recipe is quick to prepare and will impress your family and friends with its vibrant colors and delicious taste.

Ingredients

  • 2 lbs (900g) boneless, skinless chicken thighs
  • 1 cup plain yogurt
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon salt (adjust to taste)
  • 1 tablespoon lemon juice
  • Cooked basmati rice, for serving
  • Fresh cilantro, chopped (for garnish)

Directions

  1. In a large bowl, combine the yogurt, vegetable oil, minced garlic, grated ginger, ground cumin, ground coriander, turmeric, paprika, cayenne pepper, salt, and lemon juice. Mix well to form a smooth marinade.
  2. Add the chicken thighs to the marinade, making sure each piece is well coated. Cover the bowl and refrigerate for at least 30 minutes, or overnight for best results.
  3. Preheat your grill or a large skillet over medium-high heat. If using a skillet, add some vegetable oil to coat the bottom of the pan.
  4. Remove the chicken from the marinade, allowing any excess marinade to drip off. Discard the remaining marinade.
  5. Cook the chicken on the grill or skillet for about 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through. Cooking time may vary depending on the thickness of the chicken thighs.
  6. Once cooked, remove the chicken from the heat and let it rest for a few minutes.
  7. Serve the Indian-style chicken over a bed of cooked basmati rice, garnished with fresh chopped cilantro.
  8. Enjoy your delicious and flavorful Indian-style chicken!
