Ingredients

  • 4 cups of cooked black beans
  • 1 onion, diced
  • 1 jalapeno, diced
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/4 cup of chopped fresh cilantro
  • 2 cups of tortilla chips
  • 1/2 cup of vegetable broth
  • 1/4 cup of your favorite salsa
  • Salt and pepper to taste

Directions

  1. Heat a large skillet over medium heat. Add the onion, jalapeno, and garlic and cook for about 5 minutes, until softened.
  2. Stir in the cumin, oregano, and cilantro and cook for 1 minute.
