Ingredients
- 1 medium zucchini, cut into bite-sized pieces
- 1 medium yellow squash, cut into bite-sized pieces
- 1 red bell pepper, cut into bite-sized pieces
- 1/2 cup sun-dried tomatoes, chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper, to taste
Directions
- In a large bowl, combine zucchini, yellow squash, red bell pepper, sun-dried tomatoes, olive oil, garlic powder, salt and pepper.
- Transfer the mixture to a large steamer basket and set it over a pot of boiling water.
- Cover and steam for 10-15 minutes or until vegetables are tender.
- Serve warm.
