Ingredients
1/2 cup (120 ml) vegetable oil
1/2 cup (120 ml) pumpkin puree
1/2 cup (100 g) granulated sugar
1/4 cup (50 g) light brown sugar
2 large eggs, at room temperature
1 teaspoon vanilla extract
1 1/2 cups (190 g) all-purpose flour

Directions
Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin with cooking spray and set aside.
In a medium bowl, whisk together oil, pumpkin puree, sugars, eggs, and vanilla extract until combined.
In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, cloves, ginger, and salt.
Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
Gently fold in the cooled coffee until combined.
Divide the batter evenly among the 12 muffin cups.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Let cool in the pan for 10 minutes before transferring to a cooling rack.
