In a food processor, pulse cauliflower florets until finely chopped. Place in a microwave-safe bowl and microwave for 5 minutes.
Once the cauliflower is cooked, transfer to a kitchen towel and allow it to cool. Once it’s cool enough to handle, use the towel to squeeze as much moisture as possible from the cauliflower.
In a large bowl, mix together almond meal, garlic powder, Italian seasoning, salt, pepper, nutritional yeast, and olive oil. Add the cauliflower to the bowl and mix together until all ingredients are evenly distributed.
Add almond milk and mix together until a dough-like consistency is achieved.
Spray a baking sheet with non-stick cooking spray. Using your hands, form the dough into a 10-inch circle on the baking sheet.
Bake in preheated oven for 25-30 minutes, or until the crust is golden brown and crispy.
Remove from oven and top with desired toppings.
