Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup long-grain white rice
  • 1 1/2 cups beef broth, divided
  • 1 (15-ounce) can diced tomatoes with green chilies
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1/2 cup frozen corn kernels
  • 1/4 cup chopped fresh cilantro, plus more for garnish
  • 1 lime, cut into wedges for garnish

Directions

  1. Set the pressure cooker to the “browning” setting and add the ground beef and onion.
  2. Cook, stirring occasionally, until the beef is browned and the onion is softened, about 5 minutes.
  3. Stir in the garlic powder, chili powder, cumin, oregano, salt, and pepper.
  4. Add the rice, 1 cup of the beef broth, the diced tomatoes with green chilies, black beans, and corn.
  5. Secure the lid on the pressure cooker and set the valve to “sealing”. Cook on high pressure for 8 minutes.
  6. When the cooking time is complete, quick release the pressure and remove the lid.
  7. Stir in the remaining 1/2 cup of beef broth, cilantro, and lime juice.
  8. Garnish with cilantro and lime wedges if desired.
