Ingredients
- 5lbs potatoes
- 2 cups mayonnaise
- 1/2 cup yellow mustard
- 1/4 cup white vinegar
- 1/4 cup sugar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 teaspoons celery seed
- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 hard-boiled eggs
- 1/2 cup chopped onions
- 1/4 cup chopped celery
- 3 tablespoons chopped fresh parsley (optional)
Directions
- In a large pot, add the potatoes and cover with cold water. Bring to a boil over high heat and cook for about 10 minutes or until potatoes are tender. Drain and rinse with cold water.
- In a bowl, combine the mayonnaise, mustard, vinegar, sugar, garlic powder, onion powder, celery seed, salt, and pepper. Mix until completely combined.
- Slice the potatoes and add to a large bowl. Add the mayonnaise mixture and stir until potatoes are evenly coated.
- Chop the eggs and add to the bowl. Add the onions, celery, and parsley and stir until everything is combined.
- Refrigerate for at least 30 minutes before serving.
