Ingredients

  • 1 cup gluten-free rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon fine sea salt
  • 1/2 cup unsweetened almond milk
  • 2 tablespoons maple syrup
  • 3 tablespoons dairy-free mini chocolate chips
  • 1 tablespoon melted coconut oil or vegan butter
  • Extra almond milk or more maple syrup, for serving

Directions

  1. In a medium bowl, whisk together the oats, baking powder, cinnamon and salt.
  2. In a separate bowl, mix together the almond milk, maple syrup, chocolate chips and coconut oil or vegan butter.
  3. Add the wet ingredients to the dry ingredients and stir until just combined.
  4. Heat a non-stick skillet over medium heat and spray with cooking spray.
  5. Drop 1/4 cup of the batter onto the skillet, spread slightly, and cook for 2-3 minutes per side, until golden brown.
  6. Serve warm with almond milk or more maple syrup, if desired.
