- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 medium zucchinis, diced
- 2 cups broccoli florets
- 2 cups spinach leaves
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup heavy cream (optional)
- Fresh parsley for garnish
Directions
- Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic. Sauté until onion becomes translucent.
- Add diced zucchinis, broccoli florets, and spinach leaves to the pot. Sauté for 2-3 minutes, stirring occasionally.
