Ingredients

  • 1 pound ground pork
  • 1/2 cup finely diced onion
  • 1/2 cup finely diced green pepper
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon oregano
  • 1 (14.5-ounce) can diced tomatoes
  • 1/4 cup chopped fresh cilantro

Directions

  1. In a large skillet, cook the ground pork over medium heat until it is no longer pink, about 5 minutes. Drain any excess fat.
  2. Add the onion, green pepper, garlic, salt, pepper, cumin, and oregano. Cook and stir until the vegetables are tender, about 5 minutes.
  3. Stir in the tomatoes and cilantro. Cover and simmer for 15 minutes.
  4. Serve over cooked rice.
