Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 2 pounds boneless, skinless chicken breasts
  • 1 teaspoon ground cumin
  • 2 tablespoons tomato paste
  • 1 cup chicken broth
  • 1 cup pomegranate arils
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the garlic and onion and cook until the onion is softened, about 5 minutes.
  2. Add the chicken breasts to the skillet and season with cumin, salt, and pepper. Cook until the chicken is cooked through, about 8 minutes.
  3. Stir in the tomato paste and chicken broth, and bring to a simmer. Simmer for 10 minutes.
  4. Stir in the pomegranate arils and simmer for another 5 minutes.
  5. Serve with cooked rice, couscous, or quinoa and enjoy!
