Ingredients
2 tablespoons olive oil
2 cloves garlic, minced
1 onion, diced
2 pounds boneless, skinless chicken breasts
1 teaspoon ground cumin
2 tablespoons tomato paste
1 cup chicken broth
1 cup pomegranate arils
Salt and pepper to taste
Directions
Heat the olive oil in a large skillet over medium heat. Add the garlic and onion and cook until the onion is softened, about 5 minutes.
Add the chicken breasts to the skillet and season with cumin, salt, and pepper. Cook until the chicken is cooked through, about 8 minutes.
Stir in the tomato paste and chicken broth, and bring to a simmer. Simmer for 10 minutes.
Stir in the pomegranate arils and simmer for another 5 minutes.
Serve with cooked rice, couscous, or quinoa and enjoy!
