Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 pound boneless, skinless chicken breasts, cut into cubes
  • 2 cups red or black plums, pitted and sliced
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup honey
  • 1/4 teaspoon ground black pepper
  • 1/4 cup fresh parsley, chopped

Directions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add garlic and ginger and cook for 1 minute.
  3. Add chicken and cook until lightly browned, about 5 minutes.
  4. Add plums, soy sauce, honey, and pepper and cook for 5 minutes more.
  5. Remove from heat and stir in parsley.
  6. Serve over cooked rice.
