Ingredients

  • 1/2 cup butter, melted
  • 3/4 cups white sugar
  • 2 eggs, beaten
  • 1/4 cup pineapple juice
  • 1/4 cup coconut milk
  • 1/2 teaspoon rum extract
  • 1 teaspoon vanilla extract
  • 4 cups cubed white bread
  • 1/2 cup crushed pineapple
  • 1/2 cup shredded coconut
  • 1/2 cup sliced almonds

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  2. In a large bowl, combine the melted butter, sugar, eggs, pineapple juice, coconut milk, rum extract, and vanilla extract. Mix well.
  3. Add the cubed bread to the mixture and stir until evenly coated.
  4. Pour the bread mixture into the prepared baking dish and sprinkle with the crushed pineapple, coconut, and almonds.
  5. Bake for 30 minutes, or until golden brown.
