Ingredients
- 1 lb penne pasta
- 1 tablespoon olive oil
- 1 head of broccolini, trimmed and cut into 1-inch pieces
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- Salt and pepper, to taste
- 1/4 cup freshly grated Parmesan cheese
Directions
- Bring a large pot of salted water to a boil. Add the penne and cook until al dente, about 8-10 minutes.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Add the broccolini and garlic and cook until the broccolini is crisp-tender, about 5 minutes.
- Add the red pepper flakes and season with salt and pepper, to taste.
- Drain the pasta and add it to the skillet with the broccolini. Toss to combine.
- Serve immediately, topped with Parmesan cheese, if desired.
