Ingredients

  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 1/4 cup chopped almonds
  • 1/4 cup chopped walnuts
  • 1/4 cup shredded coconut
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup packed light brown sugar
  • 1/4 cup applesauce
  • 1/4 cup honey
  • 1 teaspoon vanilla extract

Directions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, whisk together the oats, flour, almonds, walnuts, coconut, baking soda, and salt.
  3. In a separate bowl, mix together the brown sugar, applesauce, honey, and vanilla extract until combined.
  4. Add the wet ingredients to the dry ingredients and stir until combined.
  5. Using a tablespoon, scoop out the dough and form into balls. Place on a parchment-lined baking sheet and flatten slightly.
  6. Bake for 10 to 12 minutes, or until lightly golden. Let cool before serving.
