Ingredients

  • 1 9-inch deep dish pie crust
  • 4 cups fresh or frozen pitted cherries
  • 1/2 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon butter (optional)
  • 1 egg white (optional)
  • 1 tablespoon granulated sugar (optional)

Directions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine cherries, 1/2 cup sugar, cornstarch, cinnamon and salt; mix well.
  3. Pour mixture into pie crust and dot with butter, if desired.
  4. Cover with top crust; seal and flute edges. Cut several slits in top crust to allow steam to escape.
  5. Beat egg white until foamy; brush over crust. Sprinkle with 1 tablespoon sugar.
  6. Bake at 375°F (190°C) for 40 to 50 minutes or until crust is golden brown and filling is bubbly.
  7. Cool on wire rack before serving.
