Ingredients
1 9-inch deep dish pie crust
4 cups fresh or frozen pitted cherries
1/2 cup granulated sugar
3 tablespoons cornstarch
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 tablespoon butter (optional)
1 egg white (optional)
1 tablespoon granulated sugar (optional)
Directions
Preheat oven to 375°F (190°C).
In a large bowl, combine cherries, 1/2 cup sugar, cornstarch, cinnamon and salt; mix well.
Pour mixture into pie crust and dot with butter, if desired.
Cover with top crust; seal and flute edges. Cut several slits in top crust to allow steam to escape.
Beat egg white until foamy; brush over crust. Sprinkle with 1 tablespoon sugar.
Bake at 375°F (190°C) for 40 to 50 minutes or until crust is golden brown and filling is bubbly.
Cool on wire rack before serving.
