Melt butter in a large saucepan over medium heat. Add flour, salt, and pepper; stir until well blended. Gradually add chicken broth, stirring constantly. Cook until mixture thickens. Add turkey, mixed vegetables, peas and carrots, corn, cheese, and thyme. Cook for 5 minutes, stirring occasionally.
Spoon mixture into a 9-inch pie plate. Place top crust over filling, seal edges, and cut away excess. Make several slits in top crust to allow steam to escape.
Bake in preheated oven for 30 minutes, or until crust is golden brown.
