Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup creamy peanut butter
  • 1/4 cup unsalted butter, melted
  • 1 cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup roasted peanuts, crushed

Directions

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin or line with cupcake liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, combine the peanut butter, melted butter, milk, egg, and vanilla extract. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the crushed peanuts into the batter.
  6. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
