Ingredients

  • 3 large sweet potatoes
  • 2 tablespoons olive oil
  • 2 tablespoons orange juice
  • 1 tablespoon honey
  • 2 teaspoons grated orange zest
  • 1 dried guajillo pepper, seeds removed and finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Chopped fresh cilantro, for garnish

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes and cut them into 1-inch thick slices.
