Ingredients
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sugar
1/4 cup butter, melted
1 egg
1/2 cup orange juice
1 teaspoon orange zest
1/2 cup dried apricots, chopped
Directions
Preheat oven to 350°F (175°C). Grease an 8x4-inch loaf pan.
In a medium bowl, sift together the flour, baking powder, baking soda and salt.
In a large bowl, cream together the sugar and butter until light and fluffy. Beat in the egg until well blended.
Stir in the orange juice and orange zest. Gradually add the dry ingredients and mix until just combined. Fold in the apricots.
Pour the batter into the prepared pan. Bake for 30 minutes or until a toothpick inserted into the center of the loaf comes out clean.
Cool for 10 minutes before turning out onto a wire rack to cool completely.
Interesting Facts
This orange-apricot loaf is an excellent way to use up overripe apricots.
It can be served plain or with a dusting of powdered sugar.
It can also be served warm with a scoop of vanilla ice cream.
