Ingredients

  • 1 cup oatmeal
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 cup applesauce
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter, melted
  • 1/2 cup diced apples
  • 1/2 cup maple syrup

Directions

  1. In a large bowl, combine the oatmeal, flour, baking powder, baking soda, and salt. Stir until blended.
  2. In a separate bowl, whisk together the eggs, applesauce, milk, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined.
  3. Heat a large skillet over medium heat. Grease the pan with the melted butter. Drop 1/4 cup of the batter onto the skillet and cook until lightly golden on both sides. Repeat with the remaining batter.
  4. In a separate bowl, mix together the diced apples and maple syrup. Serve the pancakes with the apple maple sauce.
