Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking dish.
In a large bowl, mix together the sugar, flour, cinnamon, nutmeg, ginger, and cloves. Add the drained pineapple, mashed persimmon, walnuts, and raisins, and mix until well combined.
In a separate bowl, mix together the melted butter, evaporated milk, and vanilla extract. Pour into the persimmon mixture and stir until combined.
Pour the mixture into the prepared baking dish. Bake in the preheated oven for 40 minutes, or until golden brown.
Allow to cool before serving.
