Ingredients

  • 4 cups cooked rice
  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 carrot, diced
  • 1/2 cup green peas
  • 2 tablespoons soy sauce
  • 1 teaspoon fish sauce
  • 1/2 teaspoon black pepper
  • 2 eggs, beaten
  • 1 scallion, chopped for garnish

Directions

  1. Heat the vegetable oil in a large pan or wok over medium heat.
  2. Add the diced onion and minced garlic to the pan. Sauté until the onion becomes translucent and the garlic is fragrant.
  3. Add the diced carrot and green peas to the pan. Stir-fry for 2-3 minutes until the vegetables are slightly tender.
  4. Push the vegetables to one side of the pan and pour the beaten eggs into the empty space. Scramble the eggs until cooked through.
  5. Mix the cooked eggs with the vegetables in the pan.
  6. Add the cooked rice to the pan. Stir well to combine with the vegetables and eggs.
  7. Drizzle soy sauce and fish sauce over the rice mixture. Season with black pepper.
  8. Continue to stir-fry the rice for 5-7 minutes, until heated through and well mixed.
