Ingredients
- 3-4 lb. pork roast
- 1/2 cup orange juice
- 1/2 cup lime juice
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 2 tablespoons fresh oregano, minced (or 1 teaspoon dried oregano)
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Directions
- In a small bowl, whisk together orange juice, lime juice, olive oil, garlic, oregano, cumin, salt, and pepper.
- Place pork roast in a large resealable plastic bag. Pour marinade over pork, seal bag, and turn to coat. Place in refrigerator for at least 4 hours or overnight, turning occasionally.
- Preheat oven to 350 degrees F. Place pork in a shallow roasting pan and pour marinade over top. Roast for 1 1/2 -2 hours, or until pork is cooked through and an internal thermometer reads 145 degrees F.
- Let pork rest for 10 minutes before slicing and serving.
