Ingredients

  • 2 large portobello mushrooms (stems removed and thinly sliced)
  • 1/2 cup walnuts (ground)
  • 1/4 cup onion (minced)
  • 1/4 cup celery (minced)
  • 2 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 1 tablespoon olive oil
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 cup breadcrumbs
  • 1/4 cup vegan cheese (grated)
  • 1/4 cup vegan mayonnaise
  • 3 tablespoons fresh parsley (chopped)
  • 12 slider buns

Directions

  1. Preheat oven to 375°F (190°C).
  2. Heat oil in a large skillet over medium heat. Add mushrooms, onion, celery, garlic, tomato paste, Worcestershire sauce, oregano, paprika, salt, and pepper. Cook, stirring often, for 8-10 minutes, or until mushrooms are tender.
  3. In a large bowl, combine the cooked mushroom mixture with the walnuts, breadcrumbs, vegan cheese, vegan mayonnaise, and parsley. Mix until well combined.
  4. Form the mixture into 12 sliders and place on a parchment-lined baking sheet. Bake in preheated oven for 15 minutes, or until golden brown.
  5. Serve on slider buns with your favorite condiments.
